4 medium Yukon Gold potatoes, peeled

4 tablespoons unsalted butter

2 tablespoons olive oil

3 cloves garlic, crushed

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 cup vegetable broth

Salt and pepper to taste

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    Cut the peeled potatoes into thick, cylinder-shaped pieces, about 2 inches high. Make sure they’re all uniform for even cooking.

      In a large oven-safe skillet, heat the butter and olive oil over medium heat until the butter is melted.

        Carefully add the potato pieces to the skillet, cut-side down. Let them sear for about 5-7 minutes until they are golden brown on the bottom.

          Once browned, flip the potatoes to sear the other cut side for another 5 minutes.

            Add the crushed garlic, fresh rosemary, and thyme to the skillet, stirring briefly until fragrant.

              Pour the vegetable broth into the skillet, ensuring it comes halfway up the sides of the potatoes. Season with salt and pepper to taste.

                Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the potatoes are tender and the liquid has reduced by half.

                  Remove the skillet from the oven and let the potatoes soak in the flavorful broth for an additional 5 minutes.

                    Serve the fondant potatoes on a platter, spooning a bit of the herbed broth over them, and garnish with fresh parsley.
