6 large flour tortillas

8 large eggs

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled (or use plant-based sausage)

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Salsa (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Sauté the Vegetables: In a large skillet, heat a little oil over medium-high heat. Add the diced onion and bell peppers, sautéing until they're tender, about 5-7 minutes. Remove from heat and let cool slightly.

      Cook the Eggs: In a separate bowl, whisk together the eggs, garlic powder, cumin, salt, and pepper. Pour into a clean skillet over medium heat and scramble until just set. Remove from heat.

        Combine the Fillings: In a large mixing bowl, combine the scrambled eggs, sautéed vegetables, crumbled sausage, and shredded cheese. Mix until evenly combined.

          Assemble the Burritos: Lay out a tortilla on a flat surface. Spoon about ¼ of the filling mixture onto the center of the tortilla. Fold the sides in and then roll from the bottom up to create a burrito. Repeat with remaining tortillas and filling.

            Bake the Burritos: Place the wrapped burritos seam side down on the prepared baking sheet and bake for about 15 minutes, just until the tortillas are slightly crispy and heated through.

              Cool and Freeze: Remove the burritos from the oven and let them cool completely before wrapping each individually in plastic wrap or aluminum foil. Store in a freezer-safe bag or container.
