8 large flour tortillas

8 large eggs

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled

1 bell pepper (any color), diced

1/2 medium onion, diced

1 cup cooked and cooled hash browns (fresh or frozen)

1/4 cup milk

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Salsa (for serving, optional)

Prepare Ingredients: If you haven’t done so already, cook and crumble the breakfast sausage, and if using fresh hash browns, cook them until golden brown in a skillet.

    Sauté Vegetables: Heat the olive oil over medium heat in a large skillet. Add the diced bell pepper and onion, and sauté until they are soft, about 5-7 minutes. Season with salt and pepper.

      Scramble Eggs: In a bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper. Pour the egg mixture over the sautéed vegetables in the skillet. Cook, stirring gently, until the eggs are fully scrambled and have reached your desired consistency (about 5 minutes).

        Combine: Once the eggs are cooked, mix in the crumbled sausage and hash browns. Stir until everything is heated through and evenly combined. Remove from heat.

          Assemble Burritos: Lay out each tortilla flat on a clean surface. Spoon a generous portion of the egg mixture in the center of each tortilla. Sprinkle a tablespoon of shredded cheese on top.

            Roll the Burritos: Fold the sides of the tortilla over the filling and then roll from the bottom up, ensuring the filling is well-sealed inside.

              Wrap for Freezing: Wrap each burrito tightly in plastic wrap or aluminum foil. Place them in a freezer-safe bag or container. Label with the date and type of burrito.

                Store: Freeze the burritos for up to 3 months.

                  To Serve: When ready to eat, remove a burrito from the freezer. Unwrap and microwave for approximately 2-3 minutes, or until heated through. Alternatively, warm in an oven at 350°F (175°C) for 20-25 minutes.
