Ingredients
  

For the Biscuits:

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp baking soda

1 tsp salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk

For the Beef:

1 lb thinly sliced roast beef (or deli-style beef)

2 cups beef broth

1 tbsp Worcestershire sauce

1 garlic clove, minced

Salt and pepper, to taste

For the Cheese:

1 cup shredded provolone or mozzarella cheese

For the Au Jus:

Reserved beef broth from cooking

1 tsp fresh thyme, minced (optional)

Instructions
 

Make the Biscuits:

    - Preheat the oven to 425°F (220°C).

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

        - Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

          - Pour in the buttermilk and mix until just combined. Do not overmix.

            - Turn the dough onto a floured surface, knead gently a few times, and then roll out to about 1/2 inch thick.

              - Cut into rounds using a biscuit cutter and place on a baking sheet lined with parchment paper.

                - Bake for 12-15 minutes or until golden brown. Set aside.

                  Prepare the Beef:

                    - In a large skillet over medium heat, combine the beef broth, Worcestershire sauce, minced garlic, salt, and pepper.

                      - Bring to a simmer, then add the sliced roast beef, allowing it to soak for 5-7 minutes until heated through but not overcooked.

                        Assembling the Dish:

                          - Slice each biscuit in half. On the bottom half, place a generous amount of the warm beef.

                            - Sprinkle shredded cheese over the beef and then cover with the top half of the biscuit.

                              - Place the assembled biscuits back in the oven for 2-3 minutes or until the cheese is melted.

                                Make the Au Jus:

                                  - While the biscuits are baking, heat the reserved beef broth from the skillet. Add fresh thyme if desired for enhanced flavor.

                                    Serve:

                                      - Serve the French Dip Biscuits warm with a side of Au Jus for dipping. Enjoy your delicious creation!
