1 lb (450g) thinly sliced beef (such as flank or sirloin)

2 large onions, thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 tablespoon balsamic vinegar

1 teaspoon sugar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

1 cup shredded Swiss cheese (or Gruyère)

1 tablespoon Worcestershire sauce

Fresh parsley for garnish

Toothpicks or kitchen twine for rolling

Instructions
 

Caramelize the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and sprinkle with sugar. Cook for about 20-25 minutes, stirring occasionally, until the onions are soft and caramelized. Add balsamic vinegar and thyme; season with salt and pepper. Cook for an additional 2-3 minutes. Remove from heat and set aside.

    Prepare the Beef: Season the thinly sliced beef on both sides with salt, pepper, and Worcestershire sauce. Lay the beef slices flat on a clean surface.

      Assemble the Roll-Ups: Spoon a small amount of the caramelized onion mixture onto each slice of beef (about 1-2 tablespoons) and sprinkle a little Swiss cheese on top. Carefully roll up each slice of beef tightly, securing with a toothpick or tying with kitchen twine.
