1 pound ground beef (80/20 blend)

1 large onion, thinly sliced

2 tablespoons butter

1 teaspoon sugar

Salt and pepper to taste

4 slices Swiss cheese

4 burger buns, toasted

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Fresh thyme leaves (optional, for garnish)

Caramelize the Onions: In a large skillet, melt the butter over medium heat. Add the sliced onions and sugar, stirring to coat. Cook slowly for about 15-20 minutes, stirring occasionally until the onions are deeply caramelized and golden brown. Season with a pinch of salt and set aside.

    Form the Patties: While the onions are cooking, divide the ground beef into four equal portions and form them into patties. Make a small indentation in the center of each patty to prevent them from puffing up during cooking. Season both sides with salt and pepper.

      Cook the Burgers: Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side, flip them, and immediately place a slice of Swiss cheese on each patty. Cook for another 4-5 minutes or until the burgers reach your desired doneness (internal temperature of 160°F for medium).
