Ingredients

2 boneless, skinless chicken breasts

2 large onions, thinly sliced

3 cloves garlic, minced

1 tablespoon olive oil

2 tablespoons unsalted butter

1 tablespoon balsamic vinegar

1 teaspoon sugar

1 teaspoon thyme (fresh or dried)

1 cup low-sodium chicken broth

1 cup heavy cream

8 ounces fettuccine pasta

1 cup shredded Gruyère cheese

Salt and pepper to taste

Chopped fresh parsley for garnish

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Sauté the Onions: In a large skillet over medium heat, add olive oil and butter. Once melted, add the sliced onions and cook for about 15-20 minutes, stirring frequently until they are caramelized and golden brown.

Add Flavor: Stir in the minced garlic, balsamic vinegar, sugar, thyme, salt, and pepper. Cook for another 2-3 minutes until fragrant.

Cook the Chicken: Push the onions to the side of the skillet and add the chicken breasts. Cook for about 6-7 minutes on each side, or until they are fully cooked and golden. Remove the chicken from the skillet and let it rest before slicing it into strips.

Make the Sauce: With the skillet still on medium heat, pour in the chicken broth and bring to a simmer. Scrape up any brown bits from the bottom of the pan. After about 2 minutes, stir in the heavy cream and simmer for another 5 minutes to thicken slightly.

Combine: Add the cooked fettuccine and sliced chicken back to the skillet. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Adjust seasoning as needed.

Cheese It Up: Remove from heat and stir in the shredded Gruyère cheese until melted and creamy.

Serve: Divide the pasta among serving plates and garnish with chopped parsley for a fresh touch.
