4 cups frozen hash brown potatoes, thawed

1 cup sour cream

1 cup cream of mushroom soup

1 cup shredded sharp cheddar cheese

1 large onion, finely chopped

3 tablespoons olive oil

1 tablespoon onion powder

1 teaspoon garlic powder

1 cup crispy fried onions

Salt and pepper to taste

Fresh parsley, for garnish

Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

    Sauté the onion: In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until golden brown and caramelized, about 10-15 minutes. Stir occasionally to prevent burning.

      Mix the base: In a large mixing bowl, combine the thawed hash browns, sour cream, cream of mushroom soup, sautéed onions, shredded cheddar cheese, onion powder, garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
