2 pounds Yukon Gold potatoes, peeled and cubed

2 large onions, thinly sliced

3 tablespoons unsalted butter

1 tablespoon olive oil

4 cloves garlic, minced

1 cup beef or vegetable broth

1/2 cup sour cream

1/2 cup heavy cream

1 teaspoon thyme (fresh or dried)

Salt and pepper, to taste

Shredded Gruyère cheese, for topping

Instructions
 

Cook the Potatoes: In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes, or until tender when pierced with a fork. Drain the potatoes and set aside.

    Caramelize the Onions: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook slowly, stirring occasionally, for about 20-25 minutes until they are beautifully caramelized and golden brown.

      Add Garlic and Broth: Once the onions are caramelized, add the minced garlic and thyme. Cook for an additional 2 minutes until fragrant. Pour in the broth, scraping any brown bits from the bottom of the skillet, and simmer for 5 minutes.

        Mash the Potatoes: In a large mixing bowl, add the drained potatoes. Pour the sour cream and heavy cream into the bowl. Mash the potatoes using a potato masher or fork until smooth and creamy.
