2 lbs baby potatoes, halved

2 large onions, thinly sliced

4 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper to taste

1 cup beef or vegetable broth

1 cup shredded Gruyère cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, garlic powder, dried thyme, salt, and pepper until evenly coated.

      Spread the potatoes out on a large baking sheet in a single layer and roast in the oven for about 25 minutes, or until they start to become tender.

        While the potatoes are roasting, heat the remaining olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Sauté for 15-20 minutes, stirring occasionally until the onions are caramelized and golden brown.

          Once the potatoes have roasted, remove them from the oven and add the caramelized onions on top of the potatoes.

            Pour the broth over the potato and onion mixture, then sprinkle the shredded Gruyère cheese generously over the top.

              Return the baking sheet to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and let it cool slightly before garnishing with freshly chopped parsley.
