1 pre-made pie crust (store-bought or homemade)

5 large ripe tomatoes, sliced

1 cup shredded mozzarella cheese

1 cup crumbled feta cheese

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh basil, chopped

1 tablespoon fresh oregano, chopped

1 tablespoon olive oil

Salt and pepper to taste

1/4 teaspoon garlic powder

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C). Place the pre-made pie crust in a 9-inch pie dish and prick the bottom with a fork to prevent bubbling.

    In a large bowl, gently layer the sliced tomatoes, sprinkling with salt and pepper in between layers to draw out the moisture. Let sit for about 10 minutes.

      In another bowl, mix together the mozzarella cheese, feta cheese, mayonnaise, Dijon mustard, chopped basil, chopped oregano, olive oil, garlic powder, and a pinch of salt and pepper until well combined.

        Spoon half of the cheese mixture into the bottom of the pie crust, smoothing it out evenly.

          Arrange a layer of the sliced tomatoes over the cheese mixture, then add the remaining cheese mixture on top.

            Finish with another layer of the remaining sliced tomatoes on the top.

              Bake in the preheated oven for 35-40 minutes, or until the tomatoes are tender and the cheese is bubbly and golden.

                Remove from the oven and let it cool for about 10 minutes before slicing. This will help the pie set a little more.

                  Garnish each slice with fresh basil leaves for an extra touch of flavor and presentation.
