Ingredients
  

4 pieces of fresh cod fillets (6 oz each)

1 cup all-purpose flour

1/2 cup cornmeal

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp black pepper

1 tsp salt

1 cup buttermilk

2 large eggs

Vegetable oil (for frying)

4 brioche buns

Lettuce leaves

Sliced tomatoes

Tartare sauce (optional)

Prepare the Cod: Pat the cod fillets dry using paper towels. This ensures a crispier texture when frying.

    Create the Breading Station: In a shallow dish, mix together the flour, cornmeal, paprika, garlic powder, onion powder, black pepper, and salt. In another bowl, whisk together the buttermilk and eggs until well combined.

      Coat the Fillets: Dip each cod fillet first into the buttermilk mixture, allowing the excess to drip off. Then, dredge the fillet in the flour-cornmeal mixture, pressing lightly to ensure a good coating.

        Heat the Oil: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. To test if the oil is hot enough, drop a small pinch of the breading into the oil; it should sizzle immediately.

          Fry the Cod: Carefully add the breaded cod fillets to the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the fish from the skillet and let them drain on paper towels.

            Assemble the Sandwich: Toast the brioche buns lightly. On the bottom half of each bun, place a lettuce leaf, followed by a fried cod fillet and a slice of tomato. Add a dollop of tartare sauce if desired, and top with the other half of the bun.

              Serve: Serve the sandwiches hot with your favorite side, such as fries or coleslaw.
