4 slices of bread (white, whole wheat, or your choice)

1 large ripe banana, sliced

1/2 cup creamy or crunchy peanut butter

1/4 cup granulated sugar

1 tsp cinnamon

2 large eggs

1/4 cup milk (dairy or plant-based)

1 tsp vanilla extract

4 tbsp unsalted butter

Optional: honey or maple syrup for drizzling, powdered sugar for dusting

Prepare the Mixture: In a shallow bowl, whisk together the eggs, milk, and vanilla extract. Set aside.

    Prepare the Sugar Mixture: In another shallow dish, combine the granulated sugar and cinnamon. Mix well.

      Assemble the Sandwiches: Spread a generous amount of peanut butter on two slices of bread. Layer the banana slices on top of the peanut butter, then place the remaining two slices of bread on top to form two sandwiches.
