Start by preparing the pineapple rings. Peel the pineapple, remove the core, and slice into 1/2 inch thick rings. Lay them on a paper towel to absorb any excess moisture.

      Pour the coconut milk into the dry ingredients. Whisk until you achieve a smooth batter. The batter should be thick enough to coat the pineapple rings but still pourable.
