1 ripe pineapple, peeled, cored, and cut into thick rings

1 cup shredded coconut (sweetened or unsweetened, as preferred)

1/2 cup all-purpose flour

1 teaspoon baking powder

2 large eggs

1/4 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1/4 teaspoon salt

Vegetable oil for frying

Honey or maple syrup for drizzling (optional)

Prepare the Pineapple: Lay the pineapple rings on a paper towel and pat them dry to remove excess moisture. This will help the crust stick better.

    Make the Batter: In a mixing bowl, combine the flour, baking powder, and salt. In another bowl, whisk the eggs, milk, and vanilla extract together. Gradually add the wet ingredients to the dry mixture, stirring until smooth and fully combined.

      Coat with Coconut: Place the shredded coconut in a shallow dish. Dip each pineapple ring first into the batter, letting the excess drip off, then press it into the coconut, coating both sides well.
