4 medium potatoes, peeled and diced

8 oz smoked Polish sausage, cut into half-moons

1 onion, finely chopped

2 cloves garlic, minced

2 tablespoons vegetable oil

1 tablespoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by heating the vegetable oil in a large skillet over medium heat.

    Once the oil is warm, add the diced potatoes. Fry for about 10-12 minutes, stirring occasionally, until they start to become golden brown and tender.

      Push the potatoes to one side of the skillet and add the smoked Polish sausage to the other side. Allow the sausage to cook and brown slightly for around 5-7 minutes, mixing it occasionally with the potatoes.

        Add the chopped onion and minced garlic to the skillet. Stir everything together and sauté for an additional 5 minutes until the onions are soft and translucent.

          Sprinkle the paprika, dried thyme, salt, and pepper over the mixture. Stir well to ensure all ingredients are evenly coated with spices.

            Continue to cook for another 2-3 minutes, allowing the flavors to meld together. Taste and adjust seasoning if needed.

              Remove from heat and garnish with fresh chopped parsley before serving.
