2 cups jasmine rice, cooked and cooled

1 cup coconut milk

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, and corn)

1 cup pineapple, diced

2 green onions, sliced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon fresh lime juice

Pinch of salt and pepper

Fresh cilantro for garnish

Instructions
 

In a large skillet or wok, heat the olive oil over medium heat.

    Add the chopped onion and cook until translucent, about 3-4 minutes.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the mixed vegetables to the skillet and sauté for 5 minutes until they are tender.

          Push the vegetables to one side of the skillet, and pour the rice into the other side, allowing it to heat up for about 2 minutes.

            Stir in the coconut milk, making sure to combine it evenly with the rice.

              Add the diced pineapple and soy sauce, stirring well to combine all the ingredients.

                Cook for an additional 5 minutes, stirring occasionally until the rice is heated through and fluffy.

                  Drizzle fresh lime juice over the rice and mix in the sliced green onions.

                    Season with salt and pepper to taste.

                      Remove from heat and garnish with fresh cilantro before serving.
