Ingredients

1 large sugar cookie or pre-made sugar cookie dough (about 16 oz)

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

2 cups assorted fresh fruits (such as strawberries, kiwis, blueberries, and bananas)

1/4 cup fruit preserves or glaze (apricot or raspberry work well)

Fresh mint leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Cookie Base: If using pre-made cookie dough, roll it out on a parchment-lined baking sheet into a large circle, about 1/4 inch thick. If using a sugar cookie, slice and arrange the pieces to form a large round base.

Bake the Cookie: Place your cookie base in the oven and bake for 10-12 minutes or until lightly golden. Remove from the oven and let it cool completely.

Make the Cream Cheese Topping: In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix with an electric mixer until smooth and creamy.

Spread the Topping: Once the cookie base has cooled, spread the cream cheese mixture evenly over the top using a spatula.

Arrange the Fruit: Rinse and slice your fresh fruits as desired. Artfully arrange the fruits on top of the cream cheese layer. You can create patterns or colors to make it visually appealing.

Add Fruit Glaze: In a small saucepan, heat the fruit preserves over low heat until it becomes liquid. Brush the warmed preserves over the fruit topping to add shine and sweetness.

Garnish: If desired, sprinkle fresh mint leaves around the edges for a touch of color and flavor.

Chill (Optional): Place the fruit pizza in the refrigerator for about 30 minutes to allow the flavors to meld and the topping to firm up.

Slice and Serve: Cut into wedges, serve on a platter, and enjoy your refreshing fruit pizza!
