Ingredients
  

4 tablespoons coriander seeds

2 tablespoons cumin seeds

2 tablespoons black peppercorns

1 tablespoon green cardamom pods

1 tablespoon cloves

1 small cinnamon stick

1 teaspoon nutmeg, freshly grated

1 tablespoon dried bay leaves

Instructions
 

In a dry skillet over medium heat, add the coriander seeds and toast for 2-3 minutes, stirring constantly until fragrant. Remove from the skillet and set aside.

    Repeat the same toasting process for the cumin seeds, black peppercorns, cardamom pods, cloves, and cinnamon stick, ensuring they do not burn. Each spice should be toasted for about 2-3 minutes.

      Once all spices are toasted, allow them to cool for about 5 minutes.

        In a spice grinder or high-powered blender, combine the toasted spices along with the grated nutmeg and dried bay leaves.

          Blend until you achieve a fine powder. You may need to pulse a few times to ensure even grinding.

            Taste the garam masala and adjust if necessary, adding a touch more of any preferred spice.

              Transfer the powder to an airtight container and store it in a cool, dark place.
