12-15 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon olive oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil, for garnish

Instructions
 

Cook the Pasta Shells: Bring a large pot of salted water to boil. Add the jumbo pasta shells and cook according to the package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add chopped spinach, season with salt and pepper, and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

      Mix the Cheese: In a large bowl, combine ricotta cheese, 3/4 cup of mozzarella cheese, and 1/4 cup of Parmesan cheese. Stir in the cooked spinach and garlic mixture, adjusting seasoning with salt and pepper if needed.

        Stuff the Shells: Preheat your oven to 375°F (190°C). Take a pasta shell and fill it generously with the spinach and cheese mixture. Repeat until all the shells are filled.

          Assemble the Dish: Spread 1 cup of marinara sauce on the bottom of a 9x13-inch baking dish. Arrange the stuffed shells in a single layer over the sauce. Pour the remaining marinara sauce over the shells, and sprinkle the remaining mozzarella and Parmesan cheese on top.

            Bake: Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Let the stuffed shells cool for a few minutes. Garnish with fresh basil before serving. Enjoy!
