1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup cherry tomatoes, halved

2 cups spinach leaves

8 ounces spaghetti or fettuccine pasta

1 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta cooking water.

    Prepare the Chicken: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken pieces and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden and fully cooked.

      Add Garlic: Once the chicken is cooked, add the minced garlic to the skillet. Sauté for about 1 minute, until fragrant, being careful not to burn the garlic.

        Incorporate Vegetables: Add the cherry tomatoes and spinach to the skillet. Cook for an additional 3-4 minutes, until the spinach has wilted and the tomatoes are soft.

          Combine with Pasta: Lower the heat and return the drained pasta to the skillet. Stir in the remaining 2 tablespoons of butter. If the mixture seems dry, gradually mix in some reserved pasta water until you reach your desired consistency.

            Add Parmesan: Sprinkle the grated Parmesan cheese over the pasta and gently toss everything together until the cheese is melted and evenly distributed.

              Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with freshly chopped parsley.
