Ingredients

4 bone-in pork chops (about 1-inch thick)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary leaves (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

1 tablespoon olive oil

Zest of 1 lemon

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Pork Chops: Take the pork chops out of the refrigerator about 30 minutes prior to cooking to bring them to room temperature. Season both sides generously with salt and pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops to the pan and sear for about 4-5 minutes on each side, or until they develop a nice golden brown crust. The internal temperature should reach 145°F (63°C).

Make the Garlic Butter Sauce: Reduce the heat to medium-low, push the pork chops to the side of the pan, and add the butter. Allow it to melt, then add the minced garlic, thyme, and rosemary. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.

Baste the Chops: Pour the lemon juice and zest over the pork chops. Using a spoon, baste the chops with the garlic butter sauce continuously for an additional minute, ensuring they are well coated.

Rest and Serve: Remove the skillet from the heat, transfer the pork chops to a plate, and pour the remaining garlic butter sauce on top. Allow the chops to rest for 5 minutes. Garnish with chopped parsley before serving.

Enjoy: Serve hot with your choice of sides, such as mashed potatoes, steamed vegetables, or a fresh salad.
