2 salmon fillets

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 teaspoon lemon zest

Salt and pepper to taste

1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

1 lemon, juiced

2 cups baby spinach

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Prepare the Salmon: Pat the salmon fillets dry with paper towels and season them with salt, pepper, and lemon zest on both sides.

    Cook the Garlic Butter: In a large skillet over medium heat, melt the butter. Once melted, add minced garlic and thyme leaves, cooking until fragrant (about 1-2 minutes). Be careful not to burn the garlic.
