1 lb (450g) Italian sausage links, sliced into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

8 oz (225g) fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup fresh spinach, chopped

Fresh parsley, chopped (for garnish)

Cook the Sausage: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced sausage and cook until browned and fully cooked through, about 6-8 minutes. Stir occasionally.

    Add Garlic and Seasoning: When the sausage is almost done, add the minced garlic, oregano, and red pepper flakes to the skillet. Cook for another 2 minutes until the garlic is fragrant. Season with salt and pepper to taste. Remove the sausage and garlic mixture from the skillet and set aside.
