1 pound medium shrimp, peeled and deveined

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

8 slices sourdough bread

2 cups shredded cheddar cheese

1 cup arugula or spinach

1 tablespoon fresh lemon juice

2 tablespoons fresh parsley, chopped (for garnish)

Prepare the Shrimp: In a skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, red pepper flakes, salt, and pepper. Cook for 3-4 minutes or until the shrimp turn pink and opaque. Drizzle the lemon juice over the shrimp and remove from heat.

    Assemble the Sandwich: Lay out four slices of sourdough bread on a clean surface. On each slice, place a generous portion of shredded cheddar cheese. Divide the garlic butter shrimp evenly among these slices, then top each with a handful of arugula or spinach and another slice of cheese. Finally, place the remaining slices of bread on top to form the sandwiches.

      Grill the Sandwiches: In a large skillet or griddle over medium heat, melt the remaining 2 tablespoons of butter. Once the butter is melted and bubbly, add the prepared sandwiches.
