Ingredients

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons butter

4 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 tablespoon olive oil

Optional: chili flakes for a spicy kick

Instructions

Prepare the Potatoes: In a large skillet, heat the olive oil over medium heat. Add the halved baby potatoes, season with salt and pepper, and cook until they're golden brown and tender, about 15-20 minutes, stirring occasionally. Remove the potatoes from the skillet and set aside.

Cook the Steak: In the same skillet, increase the heat to medium-high and add the steak pieces. Season with salt, pepper, rosemary, and thyme. Sear the steak for about 3-4 minutes on each side or until they reach your desired level of doneness. Remove the steak from the skillet and set aside.

Make the Garlic Butter: Lower the heat to medium and melt the butter in the skillet. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

Combine Everything: Return the steak and potatoes to the skillet with the garlic butter. Toss everything together and cook for an additional 2-3 minutes to heat through and allow the flavors to meld.

Serve: Remove from heat and garnish with fresh parsley. If you like some heat, sprinkle chili flakes over the top.

Optional: For a beautiful presentation, serve the steak and potatoes in the skillet for a rustic look or plate them individually, drizzling any remaining garlic butter sauce on top before garnishing with fresh herbs.
