1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

1 lb baby potatoes

2 tablespoons olive oil

½ cup shredded cheddar cheese

¼ cup sour cream

2 tablespoons milk

Prep the Potatoes: Begin by boiling the baby potatoes in a large pot of salted water. Cook for about 15-20 minutes or until fork-tender. Drain and set aside.

    Make Cheese Mixture: In a medium bowl, combine the shredded cheddar cheese, sour cream, milk, and a pinch of salt and pepper. Mix well to create a creamy cheese sauce.
