1 lb (450g) sirloin steak, cut into bite-sized pieces

3 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

2 lbs (900g) Yukon gold potatoes, peeled and cubed

½ cup heavy cream

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: In a large pot, place the cubed Yukon gold potatoes and cover them with cold water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender. Drain and return them to the pot.

    Make the Mash: Add 2 tablespoons of butter and the heavy cream to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm while you prepare the steak bites.

      Sear the Steak Bites: In a large skillet, heat the olive oil over medium-high heat. Add the steak bites in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until they have a nice browned crust and are cooked to your desired doneness. Remove the steak from the skillet and set aside.

        Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of butter. Once melted, add the minced garlic and fresh thyme. Sauté for about 1 minute until fragrant.
