1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

For the Potatoes:

1 lb baby potatoes, halved

3 tablespoons olive oil

1 teaspoon paprika

½ teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat the oven to 425°F (220°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.

        - Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until they are golden brown and tender, flipping halfway through.

          Cook the Steak Bites:

            - While the potatoes are roasting, season the steak bites with salt and pepper.

              - In a large skillet over medium-high heat, melt 2 tablespoons of butter.

                - Once the butter is sizzling, add the steak bites in a single layer (you may need to do this in batches to avoid overcrowding) and sear for 2-3 minutes on each side for medium-rare, or until desired doneness. Remove the steak bites from the pan and set aside.

                  Make the Garlic Butter:

                    - In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 30 seconds, or until fragrant.

                      - Stir in the fresh rosemary and thyme, allowing the flavors to meld.

                        Combine Everything:

                          - Return the steak bites to the skillet and toss them in the garlic butter until well coated. Cook for an additional 1-2 minutes to heat through.

                            Serve:

                              - Serve the garlic butter steak bites over the roasted potatoes, garnishing with chopped fresh parsley for added flavor and color.
