Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 teaspoon paprika

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, and paprika until they are evenly coated.

        - Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until they are golden and crispy, flipping them halfway through.

          Cook the Steak Bites:

            - While the potatoes are roasting, heat a large skillet over medium-high heat.

              - Season the steak cubes with salt and pepper.

                - Once the skillet is hot, add the steak bites in a single layer and cook for about 2-3 minutes per side for medium-rare (adjust time for desired doneness). You may need to do this in batches to avoid overcrowding the pan.

                  - Remove the steak bites from the skillet and set them aside on a plate.

                    Make the Garlic Butter:

                      - In the same skillet, lower the heat to medium and add the butter. Allow it to melt and bubble.

                        - Add the minced garlic and thyme, stirring constantly for about 1 minute or until fragrant. Be careful not to burn the garlic.

                          Combine and Serve:

                            - Return the cooked steak bites to the skillet and toss them in the garlic butter for about 1-2 minutes to warm through and coat them with the butter.

                              - Once the potatoes are done roasting, remove them from the oven and season with a little extra salt, if desired.

                                - Serve the garlic butter steak bites alongside the crispy potatoes. Drizzle any remaining garlic butter from the skillet over the top and garnish with fresh parsley.
