1 lb sirloin steak, cut into bite-sized cubes

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

1 teaspoon smoked paprika

Salt and pepper to taste

1 lb baby potatoes, halved

2 tablespoons fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a medium pot, place the halved baby potatoes and add enough water to cover. Season with salt and bring to a boil. Cook until fork-tender, around 10-12 minutes. Drain and set aside.

    Sear the Steak Bites: In a skillet over medium-high heat, add olive oil. Once hot, add the cubed steak. Season with salt, pepper, and smoked paprika. Sear for about 2-3 minutes until browned on all sides. Remove the steak bites and set them aside on a plate.

      Infuse Garlic Butter: In the same skillet, reduce heat to medium. Add the butter, followed by the minced garlic, rosemary, and thyme. Stir for about 1 minute until the garlic is fragrant and the butter is melted.

        Combine Steak and Potatoes: Return the steak bites to the skillet with the garlic butter mixture. Add the cooked potatoes in as well. Toss everything together gently to coat in the flavorful garlic butter. Cook for an additional 2-3 minutes until heated through.

          Serve and Garnish: Remove from heat and sprinkle with chopped parsley for added freshness and color.
