Ingredients

1 lb sirloin steak, cubed

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

1 lb baby potatoes

1 cup shredded sharp cheddar cheese

1/4 cup sour cream

Fresh chives, chopped (for garnish)

Instructions

Cook the Potatoes: Start by washing the baby potatoes and placing them in a pot. Cover with cold water and add a generous pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.

Preheat the Oven: While the potatoes are cooling, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Smash the Potatoes: Once the potatoes are cool enough to handle, gently press down each potato with the bottom of a glass or a potato masher until flattened but still intact.

Cheddar Topping: Place the smashed potatoes on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Bake in the preheated oven for about 20 minutes until golden and crispy.

Add Cheddar: Remove the potatoes from the oven, sprinkle shredded cheddar cheese over each smashed potato, and return to the oven for an additional 5-7 minutes, or until the cheese is bubbly and melted.

Cook the Steak Bites: While the potatoes are baking, heat a large skillet over medium-high heat. Melt the butter in the skillet and add minced garlic, rosemary, and thyme. Sauté for about 1 minute until fragrant.

Sear the Steak: Add the cubed sirloin steak to the skillet. Season with salt and pepper. Cook for 3-4 minutes, stirring frequently, or until the steak is browned and cooked to your desired level of doneness.

Combine and Serve: Once cooked, remove the skillet from the heat. Toss the steak bites in the garlic butter mixture to ensure they are well coated.

Plate the Dish: Serve the garlic butter steak bites alongside the crispy cheddar smashed potatoes. Garnish with chopped chives and a dollop of sour cream on the side.

                    Prep Time: 20 minutes | Total Time: 50 minutes | Servings: 4

                      - Presentation Tips: Arrange the steak bites on a rustic wooden platter next to the smashed potatoes, and sprinkle parsley for added color. Serve with additional sour cream for dipping.
