1 cup vegetable oil (such as canola or sunflower)

8 cloves garlic, thinly sliced

1/2 cup dried red chili flakes

1 teaspoon sesame seeds (optional)

1 tablespoon finely chopped fresh ginger (optional)

1 teaspoon salt

1 tablespoon black peppercorns

Instructions
 

In a small saucepan, heat the vegetable oil over medium-low heat until hot but not smoking (around 300°F/150°C).

    Add the sliced garlic to the oil. Stir gently to avoid burning. Cook for about 5-7 minutes, or until the garlic turns golden brown and fragrant.

      Using a slotted spoon, carefully remove the garlic from the oil and set it aside on a paper towel to drain. This helps prevent bitterness from the garlic burnt pieces.

        Add the dried red chili flakes, sesame seeds, chopped ginger (if using), salt, and black peppercorns to the hot oil. Stir to combine and let simmer for an additional 2-3 minutes, allowing the flavors to infuse.

          Turn off the heat and allow the oil to cool completely. Once cool, strain the oil into a clean, dry glass jar, discarding the solid spices if you prefer a smooth oil.

            Stir in the crispy garlic bits from step 3 back into the oil for added texture and flavor. Cover the jar with a lid and store in the refrigerator.
