2 cups garlic cloves, peeled

1 cup olive oil (extra virgin for best flavor)

2 thyme sprigs

1 teaspoon salt

1 teaspoon black peppercorns

Zest of 1 lemon (optional)

Prepare the Garlic: Preheat your oven to 250°F (120°C). In a medium, oven-safe dish, spread the peeled garlic cloves evenly.

    Add Oil and Aromatics: Pour the olive oil over the garlic cloves until they are completely submerged. Add the thyme sprigs, salt, black peppercorns, and lemon zest if using.
