4 medium-sized Yukon Gold potatoes, thinly sliced

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 teaspoon fresh parsley, chopped

Salt and pepper, to taste

1 cup grated Gruyère cheese (optional)

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin pan with cooking spray or a little olive oil.

    Prepare the Potatoes: Thinly slice the Yukon Gold potatoes to about 1/8 inch thick. For best results, use a mandoline or a sharp knife.

      Create the Herb Oil: In a bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, salt, and pepper. Mix well to create a fragrant herb oil.

        Layer the Potatoes: Arrange a layer of potato slices in the bottom of each muffin cup, slightly overlapping them. Brush a little of the herb oil on top. If using Gruyère cheese, sprinkle a little on top of this layer.

          Continue Layering: Repeat the layering process until the muffin cups are filled to the top (about 4-5 layers), making sure to brush each layer with the herb oil and adding cheese between some layers if desired.

            Bake the Galettes: Place the muffin pan in the preheated oven and bake for about 30-35 minutes or until the tops are golden brown and crispy and the potatoes are tender.

              Cool and Remove: Once baked, let the galettes cool in the pan for about 5 minutes. Then, carefully run a knife around the edges and gently remove them from the muffin pan.

                Serve and Enjoy: Garnish with fresh herbs if desired and serve warm as an appetizer or side dish.
