Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the cauliflower florets, minced garlic, olive oil, rosemary, thyme, paprika, salt, and pepper. Toss well to evenly coat the cauliflower with the seasoning mixture.
Spread the cauliflower mixture in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the cauliflower is golden brown and tender.
Remove from the oven and let cool slightly.
Garnish with fresh parsley before serving and serve with lemon wedges on the side for an extra zing.
