Spread the seasoned pumpkin in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, turning once halfway through, until the pumpkin is tender and golden brown.
Once roasted, remove from the oven and let cool for a few minutes.
Transfer the pumpkin to a serving dish and sprinkle with freshly chopped parsley for added flavor and color.
