Wash the baby potatoes thoroughly and cut them in half if they are larger. Pat them dry with a kitchen towel.
In a large bowl, combine the minced garlic, olive oil, Italian seasoning, red pepper flakes (if using), salt, and pepper. Mix well to create a marinade.
Add the halved potatoes to the bowl and toss them in the garlic mixture until evenly coated.
Sprinkle the grated Parmesan cheese over the coated potatoes and toss gently again to ensure the cheese sticks to the potatoes.
Preheat your air fryer to 400°F (200°C). Place the seasoned potatoes in the air fryer basket in a single layer (you may need to do this in batches). Cook for about 15-20 minutes, shaking the basket halfway through to ensure even cooking.
The potatoes should be golden brown and crispy on the outside. If necessary, cook for an additional 2-3 minutes until they reach the desired crispness.
Once done, remove the potatoes from the air fryer and transfer them to a serving bowl. Garnish with freshly chopped parsley before serving.
