4 boneless, skinless chicken thighs

2 cups jasmine rice

4 cups chicken broth

4 cloves garlic, minced

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

1 cup frozen peas (optional)

Instructions
 

Prep the Chicken: Season the chicken thighs on both sides with salt, black pepper, and Italian seasoning.

    Sear the Chicken: In a large skillet over medium-high heat, add olive oil. Once hot, add the seasoned chicken thighs. Sear for about 5-6 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, add minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

        Cook the Rice: Add jasmine rice to the garlicky oil in the skillet, stirring for about 2 minutes to toast the rice. This adds flavor.

          Add Broth: Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the skillet, and simmer for about 15 minutes. (If using frozen peas, add them halfway through cooking.)

            Combine Chicken and Cheese: After the rice is cooked and has absorbed the broth, place the seared chicken thighs on top of the rice. Sprinkle the grated Parmesan cheese over everything, cover, and let it cook for an additional 2-3 minutes on low heat until the cheese is melted and creamy.
