1 lb chicken breast, cut into 1-inch cubes

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup olive oil

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1/2 teaspoon Italian seasoning

Skewers (soaked in water if wooden)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the minced garlic, grated Parmesan, olive oil, chopped parsley, lemon juice, salt, pepper, smoked paprika, and Italian seasoning. Mix until well combined.

    Add Chicken: Add the cubed chicken breast to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Prepare Skewers: Preheat your grill or grill pan over medium-high heat. If using wooden skewers, make sure they have soaked in water for at least 30 minutes to prevent burning.

        Assemble Skewers: Thread the marinated chicken onto the skewers, packing them slightly but not too tightly to allow even cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F).

            Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve hot, garnished with additional parsley and lemon wedges on the side if desired.
