4 medium-sized Yukon Gold potatoes

4 cloves garlic, minced

1/2 cup unsalted butter, melted

1 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

1/4 teaspoon red pepper flakes (optional for heat)

Instructions
 

Preheat your oven to 425°F (220°C).

    Scrub the potatoes under cold water and pat dry with a towel. Place each potato between two wooden chopsticks or a thick spoon to keep from slicing all the way through. Carefully make lengthwise cuts every 1/4 inch to create Hasselback slices.

      In a mixing bowl, combine melted butter, minced garlic, salt, pepper, paprika, and red pepper flakes.

        Using a pastry brush or a spoon, generously brush the garlic butter mixture over the potatoes, ensuring some seeps between the slices.

          Sprinkle half of the grated Parmesan over the potatoes, allowing it to fill in the gaps between the slices.
