Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the baby carrots, olive oil, minced garlic, dried thyme, smoked paprika, salt, and pepper. Toss until the carrots are evenly coated.
Spread the carrots in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and start to caramelize, turning them halfway through for even cooking.
Remove the baking sheet from the oven and immediately sprinkle the grated Parmesan cheese evenly over the hot carrots.
Return the baking sheet to the oven for an additional 5 minutes, or until the cheese is melted and slightly golden.
Remove from the oven and let them cool for a minute, then transfer to a serving platter. Garnish with chopped fresh parsley for a pop of color.
