Ingredients

1 small head of green cabbage, thinly sliced

4 cups kale, stems removed and torn into bite-sized pieces

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon butter (optional for richness)

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

Juice of 1 lemon

¼ cup vegetable or chicken broth (optional, for extra moisture)

¼ cup grated Parmesan cheese (optional, for serving)

Instructions

Prep the Vegetables: Start by cleaning and slicing the cabbage and kale. Ensure all leaves are free from dirt and cut them into manageable pieces.

Heat the Skillet: In a large skillet over medium heat, add olive oil and butter. Allow the oil to heat until shimmering, but not smoking.

Sauté the Garlic: Add the minced garlic to the skillet, stirring frequently for about 30 seconds until fragrant. Be cautious not to let it burn.

Add Cabbage: Add the sliced cabbage to the skillet. Toss well to coat it in the garlic and oil. Sauté for about 5 minutes, stirring occasionally, until the cabbage starts to soften.

Incorporate the Kale: Stir in the kale and red pepper flakes (if using). Continue to sauté for an additional 5-7 minutes until both the cabbage and kale are tender and vibrant.

Season the Mix: Pour in the vegetable or chicken broth if using to add moisture. Season generously with salt, pepper, and lemon juice, then stir well to combine everything.

Finishing Touches: Cook for another 2-3 minutes, allowing the flavors to meld together. Taste and adjust the seasoning to your preference.

Serve: Remove the skillet from heat. If desired, sprinkle with grated Parmesan cheese for a savory finish. Serve warm as a side dish or as a light main course over quinoa or rice.
