1 pound large shrimp, peeled and deveined

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon sesame oil

1 tablespoon coconut oil

1 red bell pepper, sliced

1 cup pineapple chunks (fresh or canned)

2 green onions, sliced

1 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Lime wedges for serving

Instructions

Marinate the Shrimp: In a bowl, combine the shrimp, minced garlic, ginger, soy sauce, brown sugar, and a pinch of salt and pepper. Let marinate for 15-20 minutes, allowing the flavors to meld.

Sauté the Vegetables: In a large skillet, heat the coconut oil and sesame oil over medium heat. Add the sliced red bell pepper and sauté for 3-4 minutes until they begin to soften. If using, add crushed red pepper flakes to the pan for some heat.

Cook the Shrimp: Add the marinated shrimp to the skillet with the vegetables. Cook for about 3-5 minutes, turning frequently, until the shrimp are pink and opaque.

Add Pineapple: Gently stir in the pineapple chunks and cook for an additional 2-3 minutes, allowing the pineapple to warm through and caramelize slightly.

Finish & Serve: Once cooked, remove from heat and sprinkle with sliced green onions. Serve immediately with lime wedges on the side for added zest.
