Ingredients
  

1 medium head of cauliflower, cut into florets

8 oz (225g) cremini or button mushrooms, quartered

4 cloves garlic, minced

3 tbsp olive oil

½ tsp smoked paprika

½ tsp salt (to taste)

¼ tsp black pepper

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

2 tbsp grated Parmesan cheese (optional for extra flavor)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large mixing bowl, combine the cauliflower florets and quartered mushrooms.

      Make the Garlic Oil: In a small bowl, whisk together the olive oil, minced garlic, smoked paprika, salt, and pepper.

        Coat the Vegetables: Pour the garlic oil mixture over the cauliflower and mushrooms. Toss well to ensure all pieces are evenly coated.

          Add Thyme: Sprinkle in the fresh thyme leaves and toss again to incorporate.

            Spread on Baking Sheet: Arrange the vegetables in a single layer on a baking sheet lined with parchment paper.

              Roast: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the cauliflower is golden brown and tender. Stir halfway through for even roasting.

                Optional Cheese: If using Parmesan cheese, sprinkle it over the vegetables during the last 5 minutes of roasting to allow it to melt and become slightly crispy.

                  Serve: Take the baking sheet out of the oven and garnish with freshly chopped parsley before serving.
