1.5 lbs small red potatoes, halved

8 oz kielbasa, sliced

1/2 cup diced red onion

1/2 cup sliced celery

1/4 cup chopped fresh parsley

3 tablespoons apple cider vinegar

2 tablespoons Dijon mustard

1/4 cup olive oil

1 teaspoon sugar

Salt and pepper to taste

1/4 teaspoon smoked paprika (optional)

Instructions
 

Begin by placing the halved red potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until fork-tender. Drain and let cool slightly.

    While the potatoes are cooling, heat a large skillet over medium heat. Add the sliced kielbasa and cook until browned and crispy, approximately 5-7 minutes. Remove from the skillet and set aside.

      In the same skillet, add the diced red onion and sliced celery. Sauté for 3-4 minutes until the onion becomes translucent. Remove from heat and let it cool slightly.

        In a large mixing bowl, combine the apple cider vinegar, Dijon mustard, olive oil, sugar, salt, pepper, and smoked paprika (if using). Whisk until well combined.

          Cut the cooled potatoes into bite-sized pieces and add them to the mixing bowl along with the sautéed onion and celery, and crispy kielbasa. Gently toss everything together until the potatoes are well coated with the dressing.

            Finally, fold in the chopped fresh parsley for a burst of flavor. Adjust seasoning to taste.

              Allow the salad to sit for at least 20 minutes at room temperature or refrigerate for up to 2 hours to let the flavors meld together before serving.
