4 large russet potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

3 cups vegetable broth

1 cup heavy cream

3 tablespoons butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

4 slices of crispy bacon, crumbled (optional, for garnish)

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes, vegetable broth, thyme, smoked paprika, and bay leaf to the pot. Bring to a boil, then reduce the heat to a simmer. Cover and let it cook for about 20 minutes, or until the potatoes are tender.

        Remove the bay leaf and mash the potatoes with a potato masher or an immersion blender to your desired consistency (smooth or chunky).

          Stir in the heavy cream and simmer for another 5 minutes to heat through. Season with salt and pepper to taste.

            For added richness, you may want to adjust the amount of heavy cream based on your desired creaminess.

              Serve hot, garnished with crumbled bacon and fresh chives.
