Ingredients

400g spaghetti

1 cup freshly grated Pecorino Romano cheese

2 tablespoons freshly cracked black pepper

4 tablespoons unsalted butter

Salt, for pasta water

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil and cook the spaghetti until al dente, according to package instructions. Reserve 1 cup of pasta cooking water before draining.

Toast the Pepper: In a large skillet over medium heat, melt the butter. Add the cracked black pepper and toast for about 1-2 minutes until fragrant (be careful not to burn it).

Combine Pasta and Sauce: Add the drained spaghetti directly to the skillet with the toasted pepper. Toss to combine and sauté for about 1 minute.

Add Cheese and Water: Remove the skillet from heat. Gradually add the grated Pecorino Romano cheese along with a splash of the reserved pasta water, tossing continuously until the cheese melts and forms a creamy sauce. Add more pasta water as needed to achieve the desired creaminess.

Season and Serve: Taste and adjust the seasoning with more pepper or cheese if desired. Plate the pasta, garnish with chopped parsley, and serve immediately.
