Ingredients
  

1 cup fresh cherries, pitted and halved

1 tablespoon grated fresh ginger

2 tablespoons honey or agave syrup (adjust for sweetness)

1 tablespoon freshly squeezed lemon juice

2 cups sparkling water

Ice cubes

Fresh mint leaves for garnish

In a medium bowl, combine the pitted and halved cherries with the grated ginger and honey/agave syrup. Use a muddler or the back of a spoon to gently mash the cherries and release their juices, blending in the ginger and sweetener.
