4 cod fillets (6 oz each)

1/4 cup soy sauce (low-sodium preferred)

2 tbsp fresh ginger, grated

2 tbsp honey or maple syrup

2 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1/2 tsp red pepper flakes (optional for heat)

1/4 cup green onions, chopped (for garnish)

1 tbsp sesame seeds (for garnish)

Cooked jasmine or basmati rice, for serving

Instructions
 

Marinate the Cod: In a medium bowl, whisk together the soy sauce, grated ginger, honey, rice vinegar, sesame oil, minced garlic, and red pepper flakes (if using). Place the cod fillets in a shallow dish or a resealable plastic bag and pour the marinade over them. Allow the cod to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Prepare for Cooking: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper for easy cleanup.

      Bake the Cod: Remove the cod from the marinade and place the fillets in the prepared baking dish. Reserve the marinade for later. Bake in the oven for 12-15 minutes, or until the fish is flaky and cooked through.

        Make the Glaze: While the cod is baking, pour the reserved marinade into a small saucepan. Bring it to a simmer over medium heat and cook for about 5-7 minutes until it thickens slightly.

          Serve: Once the cod is done, drizzle the thickened ginger soy glaze over the baked cod. Garnish with chopped green onions and sesame seeds. Serve hot with jasmine or basmati rice on the side.
